I found a packaged Hot Wing mix a number of years ago that has made me "famous" with my friends and coworkers. It is called Williams Spicy Wings mix. These are not "Buffalo style" wings, they are more of a cayenne pepper hot flavor. One of the best things a bout the wings is that they are baked but come out crispy like they are fried due to the preparation method.
I have won many friendly cooking contests with these wings. In my opinion, they are a really well kept secret. Here is a link, you may be able to find them at a store near you. Here is how I have been making my wings for years.
Dry rub the wings in an equal parts flour, cayenne pepper and black pepper mixture. Sprinkle salt on them, then deep fry them. I have a little fry daddy that holds 12 wings at a time.
The sauce is 1 cup honey, 1 stick of butter, 3/4 cup of your favorite hot sauce and one tablespoon of Mongolian Fire Oil (which gives a nice ginger/garlic flavor). I add in some salt, black pepper, garlic and onion powder which blend in nicely. Let is simmer for 3-5 minutes on very low heat, stirring constantly. Then let it sit while you fry the wings.
When the wings are fried, I toss them in the sauce. Once the wings are coated, I put them under the broiler for 1-2 minutes to crisp them up, then serve.
