I found a packaged Hot Wing mix a number of years ago that has made me "famous" with my friends and coworkers.  It is called Williams Spicy Wings mix.  These are not "Buffalo style" wings, they are more of a cayenne pepper hot flavor.  One of the best things a bout the wings is that they are baked but come out crispy like they are fried due to the preparation method.

I have won many friendly cooking contests with these wings.  In my opinion, they are a really well kept secret.  Here is a link, you may be able to find them at a store near you.   If you get motivated and go buy some, I will be happy to give you a couple tips that will make them come out even better- just send me a message.

Here is how I have been making my wings for years.

Dry rub the wings in an equal parts flour, cayenne pepper and black pepper mixture.  Sprinkle salt on them, then deep fry them.  I have a little fry daddy that holds 12 wings at a time. 

The sauce is 1 cup honey, 1 stick of butter, 3/4 cup of your favorite hot sauce and one tablespoon of Mongolian Fire Oil (which gives a nice ginger/garlic flavor).  I add in some salt, black pepper, garlic and onion powder which blend in nicely.  Let is simmer for 3-5 minutes on very low heat, stirring constantly.  Then let it sit while you fry the wings.   

When the wings are fried, I toss them in the sauce.  Once the wings are coated, I put them under the broiler for 1-2 minutes to crisp them up, then serve.

Its hard to make bad wings, but I like this mixture.  Its just the right sugar and spice combo for my taste buds. 

When someone wants the wings less hot, I drop the hot sauce to a 1/4 cup and add in 1/4 cup of whatever BBQ sauce I have and believe it or not, 1/4 cup ketchup or 1/4 cup of salsa.  Either gives a nice tomato flavor to the sauce without it being marinara like.   People who don;t like the hot flavor seem to like this.

I must say it has inspired me to add them to the menu for sunday. 

Lets hope the game proceeds in a manner that allows me to actually eat.  I could not eat a thing for the 49er game and they would have gone to waste.

Ingredients:
1/4 Cup Worcestershire Sauce
1/3 Cup Soy Sauce
1/2 to Whole Lemon
3 Tspn Crushed or Minced Garlic
1.5 Tblspn Ginger
1/4 Cup Rice Viengar
1/2 Chopped Onion (I use red onion)
1/4 Cup Brown Sugar
Tobasco or Hot Sauce to Taste
Black Pepper to Taste

Mix all ingredients including frozen wings in a stock pot and set to medium heat. Squeeze the lemon into the mix. Do not put the rind in the pot. Fresh squeezed lemon juice is the key. I use half a lemon.The other half goes in my vodka! Cover the pot until the stock comes to a boil. Lower heat and uncover. The stock will reduce down and thicken up. Stir often to cover the wings with stock. Serve when the stock is at a consistency you prefer. I just dump everything into a foil pan to allow the wings to continue to marinate.

The beuaty is that they can be as hot as you want them.
