You won't hear much about Kevin Winston because he partially tore an ACL and it ruined his season, but he's a very good prospect.
Although rated lower than Winston by the "experts," Jalen Reed should be of particular interest to the Giants because he only played safety last year due to Winston's injury. He is a very good slot corner back and I will predict that he will (and should) go higher than Winston in the draft, not because of the injury but because IMO he is a superior talent (and obviously more versatile, as he proved last season).

I read that the Giants were represented for every home game in Colorado. I would have liked for Daboll to be at Ole Miss today.

I would have chosen Ole Miss over Penn State, but maybe that's why I'm not an NFL GM...lol
You could add to the Ole Miss prospects of extreme interest (IMHO): DE/ER Princely Umanmielen, DE/ER Jared Ivey, and DT JJ Pegues. Those three will be drafted before the end of the 4th round. Umanmielen is first round talent. All of them are experienced, and shined in the toughest conference in college football
