Could be any number of reasons. I doubt there is any realistic chance he isn't signed unless there's some major problem like some major legal or health issue nobody was aware of (which would be pretty bad on the front office's part). I highly doubt that's the case though.

Busy schedules from both parties. Cam probably has his personal lawyer going over every detail in the contract and his lawyer could be tied up on a big case. It'll get done. It's really just a formality that is behind because of busy schedules and maybe discussing some language in the details. Cam wants to play football - the Giants want Cam to play football, so not to worry
